Vegan Tofu with Bell Peppers and Mix Veggies | Yoga Of Eating

Ingredients :

One Tablespoon Oil

Three Onions (Sliced)

5 pods of finely chopped Garlic

One and half cup mixed Red or Yellow or Green Bell peppers

Two medium Tomatoes ( Sliced)

5 oz (150 gms) cubed Tofu

Pink Himalayan Salt to taste

1/4 teaspoon Turmeric powder

1/4 teaspoon dry Mango powder

1/4 teaspoon Cumin powder

1/8 teaspoon black pepper powder

Method :

Heat the oil. Add the Onions and sauté till it's turns pink and translucent. Add the garlic and cook till you get the fragrance of the garlic and onions. Add the bell pepper and sauté till it turns a little soft but crunchy. Add the tomatoes and cook for a few more minutes. Finally, add the salt, turmeric and remaining spices and cook for some time. Separately, stir fry the Tofu till a little brown . Add to the recipe.
